Exotic Bowl with Pumpkin Sauce and Fried Bananas

Here I am with another millet recipe – MY EXOTIC SUMMER BOWL! This bowl tastes suuuper fresh and the fried bananas make it even more delightful. Topped with healthy vegetables and a delicate pumpkin sauce, this bowl is the perfect option for lunch or dinner. I cook it with millet, but you can also use quinoa or buckwheat. 😊

Ingredients (2 portions):

For the millet:
• 120 g millet
• 240 ml water

For the pumpkin sauce:
• 50 g pumpkin purée (homemade: roast and mesh/blend the pumpkin)
12 tsp ginger powder
• a dash of coconut milk (or any other milk alternative)
• a few drops of fresh orange juice
• a pinch of salt

Veggie-fruit mix:
• 200 g pumpkin
12 zucchini
• 1 banana
12 orange
• Blueberries
• 2 tbsp olive oil
• salt

Step 1: Preheat the oven.
Preheat the oven to 200 °C.

Step 2: Cook the millet.
Firstly, rinse the grains with hot water. Boil the millet for about 10 minutes.

Step 3: Roast the pumpkin.
Cut the pumpkin into slices and roast them in the heated oven for about 20 minutes. If you want to prepare homemade pumpkin purée, roast the amount for the sauce as well.

Step 4: Sauté the zucchini.
Wash and finely cut the zucchini. Sauté it in a skillet with some olive oil on medium heat (olive oil shouldn’t be heated up too highly).

Step 5: Remove the pumpkin from the oven.
Divide the amount for the sauce and the veggie mix. Add the pumpkin for the veggie mix to the zucchini and heat up both for a couple of minutes with olive oil on medium heat. Add salt to taste. Mesh the other part of the pumpkin for the sauce until smooth.

Step 6: Fry the banana.
Slice the banana and fry the slices in a separate pan with some coconut oil (or olive oil) for a few minutes on each side – not too long! Remove the pan from the heat when the banana slices become golden.

Step 7: Prepare the sauce.
Mix the pumpkin purée with coconut milk and ginger powder. Add a pinch of salt and a few drops of orange juice. Stir well.

Step 8: Add everything together!
Now, mix the pumpkin sauce with the cooked millet and stir well. Put the millet into a bowl and top it with the veggie mixture and the fried bananas. You can also add some orange cubes and blueberries on top. Ready!
